Mum’s Boiled Fruit Cake

This is Mum’s Boiled Fruit Cake recipe.  While many of us like this, she much prefers Aunty Elsie’s recipe.

1 cup brown sugar

1 cup water

250g mixed dried fruit

125g butter

1 tsp mixed spice

1 tsp carb soda

1 or 2 eggs

1 Tbsp coffee essence or parisien essence

1 cup plain flour

1 cup self raising flour

 

Combine the first 6 ingredients in a saucepan.

Bring to the boil and boil for 3 minutes.

Allow to cool.

Beat in egg(s) and essence

Add sifted flours and mix to combine

Bake in a moderate oven for 1 hour

ETA:  And this is the beauty of a blog.  As people are reading it, they are telling more stories.

I now know that THIS cake was the birthday cake frequently requested by two of my sisters, Jan and Colette.  Colette remembers that she loved it with green icing! 

Given that these two birthdays fell in November and December, that was a lot of fruit cake Mum was making all at once.  Good thing she has yummy produce.
