My brother-in-law loves rice pudding. My sister used to make it for him frequently, but, as cooking for husband’s tends to be, it never matched his childhood memories.
One evening, driving home from dinner at my Mum’s house he said to my sister, “Now, THAT was nice rice pudding. Why don’t you ask your Mum for her recipe?” My poor sister replied in exasperation, “That IS the recipe I make!!”
Hopefully your loved ones will appreciate your efforts more than he did.
½ cup uncooked rice
½ cup sugar
½ tsp salt
¼ tsp nutmeg
¼ tsp cinnamon
1 tsp vanilla
1.2 L milk
30g butter
Combine all ingredients except butter in pyrex baking dish.
Dot butter on top.
Bake in very slow oven, uncovered, stirring frequently, for 2 hours or until rice is tender.
Serves 4 (or a little more)
